Spinach Strawberry & Smoked Salmon Salad

Hi beautiful people. I just wanted to say a quick hello and share a quick salad I put together for lunch. Its fresh, sweet, tangy and makes a great appetizer or a easy lunch or dinner. I’m all about simplicity and this is just what I needed today. I purchased my salmon from Costco and the brand I bought was Norwegian Fiord smoked steelhead salmon. I can eat it on its own sprinkled with some fresh lemon juice, capers and sliced onion on a cracker soooo good. You can use canned salmon or tuna if you like, works just as well. Daiya caesar is my favorite salad dressing, its thick and creamy and rich in flavour. If you guys know of other dairy free caeser dressings that I can try comment below.

Spinach Strawberry & Strawberry Smoked Salmon

Serves: 1-2

2 cups fresh spinach

1 cup smoked salmon (shredded)

1 cup fresh strawberries (sliced)

1/3 cup gluten free croutons

1/3 cup purple onion (diced)

1-2 Daiya dairy free creamy Caesar dressing

2 tablespoons almonds (coarsely chopped)


1. Rinse and pat dry the spinach, strawberries and onion, shred your smoked salmon. Combine all ingredients, drizzle the caesar dressing, toss and serve.
