Pan Seared Lamb Chops

I wanted to share with you this super easy lamb recipe I whipped up over the weekend. I love lamb for its simplicity, texture and of course flavour. I find it to be one of those cuts of meat that doesn't require a complicated marinade to bring out its beautiful essence. You can serve this as an appetizer/main or be like me and make them because you had a craving and thought it would go well with your favourite Matlock episode curled up on the couch in your jammies.


To keep this simple, I just picked up 6 pieces at my local butcher and you don't need any fancy equipment to create this meaty bite, just a good ole fashioned frying pan or small griddle will do as the cooking time is relatively quick. I used oregano and rosemary as my main herbs but if you have italian seasoning, thyme or basil (fresh or dry) that will work just as well. Now see below just how elementary this to make.


Ingredients:

6 lamb chops

Juice of 1 lemon

5 cloves of garlic minced

2 tablespoon white vinegar (to rinse meat)

2 tablespoon olive oil

1/2 tablespoon dried oregano

1/2 tablespoon dried rosemary

1/2 teaspoon paprika

Season salt or pink himalayan salt and pepper to taste

Dried parsley and fresh oregano or rosemary for garnish (optional)

Directions: 1.  In a bowl, rinse the lamb chops with vinegar and pat dry with a paper towel to remove any excess water.

2.  In a clean bowl add all the ingredients to the lamb chops and cover with foil or cling wrap.  Place in the fridge and let marinate up to an hour or overnight if you prefer.

3.  Over medium heat, add 1-2 tablespoons of olive oil, enough to evenly coat your frying pan or grill.

4.  Place lamp chops evenly in pan or grill, careful not to overcrowd.  Sear for 3-5 minutes each side or until your preferred doneness.

5.  Remove from heat, garnish with a splash of lemon juice and dried parsley for garnish and serve. And just like that, easy breezy pan seared lamb chops.
