Home Fries, who doesn't love em? They're my staple when I visit any local ma & pops diner, especially when their extra crispy and fresh off the grill.
This is my basic recipe but customize this to your liking by tossing in your favorite herbs and spices and don’t be shy ya’ll. You can toss on chili flakes, minced garlic, sautéed onions, jerk seasoning, use whatever you got to make it your very own dine-in creation. I’ve tossed these bad boys in the frying pan after searing some bacon and OMG the flavour and yes grease from the fat gave them that extra boost of goodness. Now in my version I cut the potatoes into cubes but you can slice them also. I’d love to hear and try how you "dinerize" your home fries! Comment down below.
2 rustic potatoes (skin on)
1 tablespoon Earth Balance soy free buttery spread
1 tablespoon Italian season
1/2 tablespoon paprika
1/2 tablespoon chicken bouillon
salt and pepper to taste
1. Wash your potatoes thoroughly, pat dry, cut into cubes leaving the skin-on
2. In a small pot bring water to a boil, add the bouillon and potatoes and let boil for 5 minutes then drain. Let cool for a few minutes and pat dry.
3. Combine your italian season, paprika and salt and pepper coating evenly.
4. Heat your skillet over medium heat, add your buttery spread and potatoes - be sure not to overcrowd the pan. Fry until crispy on all sides.
